Records indicate that hazelnuts have grown along the Black Sea coastline in Northern Turkey since 300 B.C. and exported for the last 6 centuries.
The climate conditions in Turkey are ideal for the hazelnut and Turkey has thus been the largest producer in the world for centuries. The high-end technologies available in Turkey’s processing facilities have provided the largest variety of hazelnuts that are being used commonly in confectionary and bakery items. |

A hazelnut is the nut of the hazel and is also known as a cob nut or filbert nut according to species. A cob is roughly spherical to oval, about 15–25 mm long and 10–15 mm in diameter, with an outer fibrous husk surrounding a smooth shell. A filbert is more elongated, being about twice as long as it is round. The nut falls out of the husk when ripe, about 7–8 months after pollination. The kernell of the seed is edible and used raw or roasted, or ground into a paste.
Hazelnuts are a rich addition to many different food varieties such as fine confections, bakery products, salads, dressings, entrees, sauces as well as and have a nutty, sweet flavor.
There are two types of Turkish Hazelnuts: Ordu (Levant) and Giresun. Ordu Levant kind is the most common type that is grown in Ordu, Trabzon and Akcakoca, whereas the Giresun kind, grown in Giresun, has more fat and is therefore tastier and more expensive.
They carry high nutritional values such as protein, carbohydrates, vitamin E, minerals, dietary fibres, phytosterol and antioxidant phenolics. |

Around mid-August, the trees drop their nuts and leaves. Most commercial growers wait for the nuts to drop on their own, rather than use equipment to shake them from the tree.
The hazelnuts are picked by the farmers and can be sold In-Shell or shelled. To acquire shelled hazelnuts, they first go through shelling plants and get separated according to their calibers. The kernels are brought to the processing plants where they are produced raw, roasted or blanched. |
