History read

The pistachio tree was first cultivated in Western Asia and became an important crop in Iran for many years. It was also a tree unique to Syrian soil and the reason it grows in large quantities around that area is the long, hot summers and the resistance to drought.

Native to the Middle East, pistachios are one of the oldest flowering nut trees. Recent archeological evidence in Turkey shows that humans have been enjoying them since 7000 B.C. It spread from Middle East to Mediterranean and because of its nutritional value and long storage life; pistachios were carried by travelers across the ancient Silk Road connecting China and the West.

 
Description read

The 20-foot tall trees thrive in stony, poor soil under high heat and with little or no rainfall, but cannot tolerate humidity or excessive moisture conditions. These trees live for centuries with no care necessary. In fact, Iran boasts of a 700-year-old tree still living.

The pistachio has been used as a dyeing agent and a folk remedy for ailments ranging from toothaches to sclerosis of the liver. The Antep variety is a premium nut with a distinctive, sweet pistachio taste, similar to wild varieties that grow throughout Asia Minor. Its shell is brown in color, and is the nut of choice among connoisseurs. Turkey has the third largest production after Iran and USA.

Pistachio nuts are high in protein, fiber and potassium, which make it an important part of a healthy diet.
 
Harvest read

In Turkey all harvesting operations are done manually. Some growers harvest in August and sell their crops freshly. Other growers are harvesting their crop in September and October.

Drying of the pistachio harvest is done on the ground by laying the crops on the cloths for 7—10 days until they fully dry. The Roasting process is done at the plants after the crops have been sold.

Separation of split and nut is also done in the plants. The storage of the pistachio is done in sack and simple tanks.
