The early Phoenicians and Egyptians were responsible for expanding the popularity of raisins throughout the western world. Grape cultivation began in the Egyptian delta region around 2400 BC, memorialized in temple carvings, mosaics, and paintings. At one time in ancient Rome, raisins were considered so valuable that two jars could buy a slave.
Due to their long-term storability and ease of transport, raisins traveled with Christopher Columbus, tickled George Washington's palate at Mount Vernon, helped fuel Robert E. Peary's conquest of the North Pole in 1908, and accompanied astronaut Scott Carpenter in outer space in 1962.

The most popular raisin types that are traded today are the Thompson raisins and the Sultanas. The raisins vary from green to dark brown (Thompson), or light brown (Sultanas). Beside South African ones, other Golden Raisins are treated with Sulfur dioxide before Sun-Drying to conserve their light color. Natural Golden Raisins are obtained with no use of sulfur dioxide from the Sultana raisins.
Sultanas are dipped in into a solution of water, potassium carbonate and olive oil, in order to fasten the drying process. Raisins (Thompson Type) are not dipped into solution and dried naturally and it takes more time than sultanas to be dried. Because of this reason Raisins (Thompson Type) are darker color than Sultanas.
Raisins rank among the top antioxidant foods, according to USDA government tests.
Organic Sultanas are becoming more popular as a trade commodity to the US market with the increasing health trends.

| The harvest time is mid-August to September. The crop availability changes according to the climate all year around. The sun-drying process can take up to 2 to 4 weeks and any rain during this period will harm the crop. |
